You can change the default service for certain postcodes.
to do this go to
Postcode Service Redirect
(Customer Ordering > Postcode Service Redirect)

Then all you do is add in the Postcode and select the new service you want and press insert.
for example:
Northern Ireland BT1 you want to use an express service.
